It’s one of the best student’s companions, especially when the pocket or chop box is dry. It is easy to prepare, at a good cost too and filling. Back in the day, those who ate gari soakings were regarded as broke, but that story is different today with this snack or meal selling at mind-blowing prices in some big hotels in the country.

Gari soaking is very popular in Ghana and has gari as its main ingredient. So, other accompanying ingredients are sugar, milk and water. Groundnuts and ice cubes are optional, but you may want to add them as they give an exceptional taste. As the name implies, it is made by soaking gari in water and milk to upgrade its taste and nutrition. First, pour gari in a bowl or cup as suits your fancy. However, care must be taken for the right amount of gari as gari is self-raising. Add sugar, groundnuts or milk if using powdered milk. Pour water in the mixture while stirring at the same time. If using evaporated milk, add it at this point while stirring the mixture for creamy goodness, and finally add the ice cubes. Viola! Yourgari soakings are ready! Yummy!

This meal is a “Saviour”, too many a rumbling tummy needing a quick fix. In recent times, some hotels in Ghana have added this local food on their menus giving it interesting names like cassava flakes smoothie. However, some additions like using coconut water instead of water and adding diced coconut to the gari soakings for an exotic treat have stepped it up a notch. Coconut water is high in potassium and low in calories and carbs, while promoting healthier skin and aiding hydration. What about trying strawberry flavoured milk powder in your gari soakings. See, it is amazingly heavenly!
